Thanks for all your replies: I'm going to have to look into all of these ideas soon.
Does anyone know if there is some sort of adapter I can get that can solve this issue with a single 1/4" cable? I'm moving into a small apartment and I will need to play through headphones. I was hoping I could run my stick into my bass amp, but I'm not sure what sort of male-to-female adapter would allow me to combine both stereo outputs into a single mono signal.

You need a mono to dual mono cable as others have said. Then the arguablly cheapest way to get you up and running is to buy a very small mixer. You plug both outputs from the stick cable into the mixer, one output from the mixer into your amp. It's not the best solution but it's probably the quickest and cheapest solution to get you amplified.

A Boss Ls-2 pedal will do the trick! Usually can find them used for 35-45 USD

Or you can look for a stereo-to-mono jack adapter. I used to have a Proel one to input both sides of the stickup into a small practice amp:

It makes the sound a bit muddy and practically makes it impossible to use volume pots to balance the sound, but it works. Although an active solution would be better - you can look for a line selector pedal, a small mixer or an acoustic guitar preamp (there are many that have 2 inputs 1 output to combine piezo and mic signals).

You can actually find similar adapters on Ebay:

http://www.ebay.com/itm/6-35mm-STEREO-S ... 51c34202e0

http://www.ebay.com/itm/4-Copper-Mono-6 ... 5d425a401a

http://www.ebay.com/itm/Copper-Mono-6-3 ... 2c96554dae

Just look for "6.35 stereo to 6.35 mono". Most of the results would be minijack solutions or Y-cables (dual mono to stereo), but you can find some stereo->mono 6.35 jacks as well.

It sounds like you might want to consider a 2-input headphones amp instead. PreSonus has them. I could also dare mention the StickABout, which can serve this function amongst many others...
